Marc’s mom’s macaroons Ingredients: 4 egg whites 1 tbsp vanilla 1-2 tbsp sugar (to taste) 1/4 tsp salt 2 + 1/3 packets of TJ’s sweetened shredded coconut (each packet is 6 oz so ~14 oz total) [optional] bittersweet chocolate, melted Directions: Beat egg whites until soft peaks form, add salt, sugar, and vanilla. Making quick breads is really as easy as it gets. Kind like learning your A,B,C’s – once you figure out the basics, it’s a snap! I promise I didn’t plan the name of this bread around that little theme, but it was too perfect to NOT call this ABCD bread. If you like dates, you will like this bread. Guess what? Chicken butt. I’m five years old. Last year I thought my New Years Eve was the lamest ever (refresher: I was preggo and passed out on my in-laws couch before midnight). Round 2! Actually, if you count the Thanksmas we had in Tahoe earlier in December with Kyle’s family, this is really our third Christmas. No such thing as too much celebrating, right?!
