What I did Wednesday

Hello sunshine! First things first, I went on a run with my bundled up babe.  Ok, not first things first.  I nursed him before anything else.  Anyway, it wasn’t that cold out but I still made him super cozy.  As a treat, I hit up Starbucks mid-jog.  Took it home in my travel mug so it was still hot post-shower. Aside from the decaf joe, we had the same thing for breakfast.  Scrambled eggs with a pumpkin coconut flour muffin.  And blueberries.  Always blueberries for the little man. After we played around, I put him… Read more >

More allergy free baking with coconut flour

Success number one with coconut flour baking was enough of a confidence boost to encourage me to try again.  So I did.  This time with a few of the super ripe bananas we had on hand.  Success number two! Because the bananas were almost entirely brown I didn’t think much sugar was necessary and I was right!  This bread is sweet in a way that doesn’t taste “healthy”.  I loved it.  And so did P.  I think it’s going to be the recipe I use for his birthday cupcakes.  Can you believe it’s almost 1… Read more >

My highlights: week 2

Hey hey!  It was a good week around these parts.  I got some time to hang with girlfriends, I took P to the library and the zoo, and I even fit in several workouts.  Happy dance.  🙂 Here are some photos I took throughout. Beet, carrots, apple, ginger juice + an article from my dad about the range of GI/immune responses to oats.  Gluten is one tricky beast. Hilarious pose.  This kid kills me. Do you have a textual relationship with your sushi provider?  Guilty! I looked over and…this.  Standing is now his fave.  Ok,… Read more >

Week ‘o eats

The whole shebang of last week in one post.  Here goes. Breakfast on Monday was the last of this savory bread and fried eggs.   Breakfast on Tuesday was out – I had a savory crepe with hash browns at Crepeville. Because Crepeville’s portions are awesomely massive I had leftovers for breakfast on Wednesday.  Which I paired with two fried eggs. Thursday I made steel cut oats in the rice cooker (the crock pot was already occupied) for our whole family.  I topped mine with a bunch of non-nut things (aka seeds galore) – including… Read more >

Quiche is a weird word

I meant to make this with a crust, but when I opened this gluten free crust it was covered in mold.  Boo!   What the heck? I’m going to call this a fluke because I tried this crust before and loved it (minus the mold).  But this was definitely a bummer to open.  Since it was nap time I couldn’t do anything but go crust-less.  [Okay that’s a lie, I could have made my own crust, but I tried that and it didn’t work out.  Instead I wound up with pancake like biscuits.]    They… Read more >
