The mother of invention

Necessity is the mother of invention.  At least that’s how the phrase goes.  Desperation is more like it… The other night was just a typical night in the scheme of my pregnancy.  I wasn’t craving anything remotely healthy, but I also couldn’t figure out what I even wanted to eat.  Even though we had plenty of options in the fridge, I wasn’t feeling any of it.  Kyle made himself dinner, but I didn’t want what he was having either.  So I held out, waiting for my appetite to reveal itself.  Finally I decided I wanted… Read more >

Two ingredient pancakes

I got a few questions about the two ingredient pancakes I showed last week, so I thought I’d just answer them in one place.   I’m definitely not the creator of this “recipe” (if you can call it that?).  I don’t know where it originated exactly.  To be honest, knowing it was made of just bananas and eggs, I was skeptical that it would (a) turn out & (b) taste good. For the record, it definitely isn’t as good as a normal pancake, but the fact that it’s faster and easier to make than most… Read more >

Sweaty Selections

This weekend was a (partial) work weekend.  And it was INSANELY hot.  Fall is nowhere in sight and while I usually love 90 degree temps, my hormones are not on the same page.  At all.  Our AC isn’t doing much of anything and so Kyle and I spent a large part of the weekend bitching about how uncomfortable and sweaty we were.  So productive. Anyway.  I did take pics of parts of the weekend, so I’ll share. Friday morning I had oatmeal with apples and almond butter.  Even though it was hot, it was the… Read more >

A bun rut

I have a million pics of meals with Udi’s GF buns.  I’m not kidding.  They are wonderful.  And I got hooked when they were on sale, but now they are back to the (insane) $4.99/4 buns.  Grrr.  It’s a love affair mostly exclusive to breakfast but it does make it’s way to later meals too. Breakfast: toasted bun with Earth Balance, fried egg, and farmer’s market strawberries (SO GOOD!) Lunch: almond butter and banana sandwich on a bun   The rest of the banana was eaten plain with extra spoonfuls of almond butter.  I was… Read more >

A wedding and a bump

Where oh where to begin.  Last weekend was so full. On Thursday we drove home via the glorious I-5.  If I had to guess how much of my life I’ve spent on that drive… So Thursday morning I got up early because I had a few things I wanted to get done before the commute home.  First, breakfast. Another vegan tofu “scramble” with a sliced peach on the side (as if you couldn’t figure out what that fruit was). And my folate, DHA and iced tea.  Naturally. After breakfast, I ran some errands, and then… Read more >
