What’s growing?

I was supposed to work this Saturday, but I lucked out big time and got the 4:30 am call.  I love seeing my work number on my phone before my alarm goes off.  It’s always good news.  In this case, they were overstaffed so I got a holiday.  And with that, my weekend turned into all kinds of awesome.  🙂 Unable to get back to sleep, I just decided to get up.  I took a photo of my bump in the (dirty) bathroom mirror since you guys all gave me crap for not showing a… Read more >

23 week check-in

Pregnancy is weird.  I’m definitely changing more and more as the days go by. I’m 23 weeks today and really starting to look big now.  Super pregnant.  I feel like my bump is a whole other body part.  In the morning, it’s manageable, but as soon as I’m upright and gravity allows things to shift, I feel the weight of it.  Big time.  It’s very much a foreign feeling.  I’m unable to sit comfortably on the couch anymore.  My bump takes up so much space that the bend of my hips needs to be greater… Read more >

All over So Cal

This weekend Kyle and I visited my G-ma in Newport Beach, went to a friend’s baby shower in Fullerton, attended a wedding in Temecula, and stayed with Kyle’s parents in San Clemente.  If you do the math, that’s over 300 miles of driving (6+ hours!!!). Check out how fun this looks. Just our luck – gas prices reached $5.50 per gallon this weekend!  Isn’t that fabulous?  Of course record breaking fuel prices would coincide with such a jam packed weekend on the road. Anyway.  Sarcasm aside, it was pretty awesome to see so many family… Read more >

Breakfast Polenta Plate

I don’t know what the difference is between polenta and grits.  I think it has something to do with the type of corn used to make the meal, but I’m not totally sure about that.  Feel free to offer your two cents if you’re wise to the culinary details. I’m calling this polenta because it’s on a plate.  Grits = bowl.  Polenta = plate.  Clearly I’m not a chef.  I prepared it the same way I’d prepare grits, with a 2:1 liquid to grain ratio.  I used half water & half plain almond milk… Read more >

Happy October

I’m trying to stay active in the kitchen.  Proof… I made muffins.  But before you pat me on the back for navigating my way out of my pregnancy laziness, you should know something.  These weren’t necessarily the result of an urge to bake, but mostly because I’m incredibly frugal and we had 3 brown bananas (and a freezer packed with frozen bananas) sitting on the counter. So banana muffins it was! I topped half with nuts (for Kyle) and the rest were nut-free (for me).   Sadly I didn’t measure or write down anything, so… Read more >
