A day in the life…

Of a very pregnant (over 40 weeks and counting!) lady…on maternity leave… Wake up 4+ times throughout the night.  Finally get up for good some time between 6-8 am. Drink weak tea with almond milk and maple syrup.  Wonder how much longer til you can guzzle caffeine again.   Make breakfast #1.  A bowl of oats with nut butter & bananas.  I usually have half the banana at a time since it seems to give me reflux now (realistically everything does).  Play on the computer.  Respond to emails and blog comments.  Make & prep food… Read more >

Kale & Tomato Strata

I’ve perfected the strata.  It was good before, but now it’s awesome. Kyle will tell you the same (unless it means he’ll have to share with you, in which case he may lie in order to save more for himself). Kale & Tomato Strata Ingredients: ~6 oz (approximately 1/3 of a 1 lb loaf) sourdough, cubed 3 kale leaves, de-stemmed and ripped into bite sized pieces 1/3 cup diced tomatoes 2 cups plain 2% greek yogurt 3 eggs 1/2 cup water 1/2 tsp onion powder 1/2 tsp garlic powder 1/4 tsp dried parsley 1/4 tsp… Read more >

Egg and tofu wrap

At first I thought I just wanted a simple breakfast wrap. Spinach, fried egg, Rudi’s GF tortilla. But it looked a little sad (despite the absolutely perfect fried egg), so I took a fridge survey, and decided to make a mustard tofu salad too. It had 1/4 block of extra firm tofu, dijon mustard, honey mustard, plain almond milk, and lemon juice. It was a little bit runny, but I wasn’t too bothered by it.  Just meant more juicy goodness to wipe up with (extra) carbs afterwards. I could hardly stand it’s perfection.  I had… Read more >

For the avocado lovers

I ate two avocados today.  For breakfast I had toast with avocado and a pinch of salt.  For lunch I had a salad with a lot of avocado.  For dinner I had a stir fry topped in avocado. I honestly couldn’t tell you which was my favorite meal.  I love avocado.  I don’t understand people who don’t like avocado.  It makes no sense to me.   It seems like I’m back in a salad phase because this was so good I can’t wait to have it again.  And again.  And again.    Spring greens.  Lightlife’s… Read more >

Creamy Quinoa with Kale

Quickie veggie dinner with mega protein – check! While the kale simmered in a water and olive oil bath, I prepared the sauce.  I took Sabra roasted red pepper hummus and added nutritional yeast to it, then thinned it out with lemon juice and water.  The more hummus you use, the better. Then I added the (already cooked) quinoa to the pan, cracked in a couple of eggs, scrambled the whole thing, and topped it in the lovely hummus sauce. Perfection!  Done in under 20 minutes.  This is the ultimate hippie meal.  A classic in… Read more >
