Our final day together in Spain was only partially spent in Madrid. To anyone considering a day trip to El Escorial – go! It’s an easy excursion that’s interesting even if you’re not a history geek. I forgot to mention how my bar stash came to the rescue during our two hour tour through the Reina Sofia. My dad’s blood sugar was bottoming out, so he asked if I had anything on hand. It’s getting to the point where making my meals are almost Top Chef challenges. The fridge is nearly bare, save for some lingering leftovers and oddities that have been hiding in the back for quite some time. Case in point, this yves veggie cuisine meatless deli turkey.
