I’m slightly embarrassed by how long this post has taken to write. I prepped the ingredients over a week ago. I steamed the squash, cooked the quinoa, thawed the spinach and edamame, and assembled the team of seasonings. Then I mixed everything together in a tupperware and forgot about it. The other day, however, I remembered it in the back of the fridge and quickly took action. I formed patties out of the mix, rolling them smooth between my palms before adding them to a hot pan. There’s quite a bit of confusion surrounding the difference between corn flour and cornmeal. They are not entirely different, but after doing further research, I found the following. 1. Corn flour is ground finer than corn meal 2. Corn flour has a stronger taste 3. Corn flour is more commonly used as an ingredient in a recipe, whereas cornmeal is a staple in many countries’ diets. 4. First things first: I only use extra firm. I have no brand allegiance, I buy whatever is on sale and cheapest (and organic). Now that I’ve gotten the basics out of the way, here’s a more detailed instructional post on making delicious tofu. Remove it from the container and liquid and press it. After Saturday’s nightcap, Kyle and I found ourselves sucked into an A&E marathon. Has anyone else ever seen The First 48? Because we had finished our Netflix-ed Dexter DVDs the previous night (and didn’t want to pay $11.99 for the Hyatt’s On-Demand films) our TV options were limited. Turns out The First 48 is a really good show…so good in fact, that we’ve now seen the entire first season. 😉 Anyway, Sunday started the same as Saturday (plus football).
