Do you know how much I love waffles? I loooooove waffles. I should really make them way more often. I think I have a mental block about the (perceived) hassle, when in reality, the cooking process is way less labor intensive than pancakes (you just pour on the batter and forget about them – no flipping required and you get multiple per pour as opposed to pancakes which you have to make individually). I was supposed to work this Saturday, but I lucked out big time and got the 4:30 am call. I love seeing my work number on my phone before my alarm goes off. It’s always good news. Guess what’s for dinner? Chicken vegan pot pies! My mom2 made this and I’m pretty jealous I wasn’t in town to sample it. Sometimes when I work night shifts, I forget to make dinner for Kyle. I usually realize it around 5 pm – right about the time I should be packing up my stuff and heading to the hospital. This isn’t a tragedy by any means, he’s a great cook, and could certainly make a good meal for himself. Alternative title for this post: the day I ate an entire avocado. Oh look! A non-egg breakfast! We were out of eggs, so the night before I made a vegan alternative. Just silken lite tofu, nutritional yeast, & Bragg’s liquid aminos.
