Caramel studded oatmeal blondie bars

No Bake Coconut Balls

No-Bake Coconut Balls [vegan, gluten free, FODMAPs friendly] Ingredients: 2 cup shredded unsweetened coconut 8 dates, pitted 3 tbsp brown rice syrup 1 tbsp water 1/8 tsp salt Directions: Pulse coconut and dates in a food processor.  Add in syrup and salt and continue to pulse.  Add water if needed (it will depend on the freshness of your dates).  I needed 1 tbsp water for the dough to stick.  Roll into balls.  Store in fridge or freezer.  These were so simple and so good.  I plan on making different versions in the future with peanut… Read more >

“Surprise” cookies

  Baby Batch Peanut Butter “surprise” Cookies [vegan, gluten free, FODMAPs friendly] Ingredients: 2 tbsp vegan mayo (I used nasoya whipped) 3 tbsp creamy natural peanut butter 1/4 cup cane sugar 1/2 tsp vanilla extract 1 tbsp ground chia seeds 1 tbsp water 1/2 cup oat flour 1/2 tsp baking powder pinch of salt Directions: Combine mayo and peanut butter together until well mixed.  Add chia seeds and water into the mix.  Let it rest for a bit. I have been making legit dinners lately.  It’s good to be back in the kitchen – planning weekly menus and grocery shopping.  Much more wallet friendly too.
