Dramatic post title, huh. Even though I’ve already technically started work, it has all been fluff stuff, like HR paperwork, physical eval, etc. So this weekend was my last REAL weekend as a stay-at-home mom. It’s sad. On the left is Amy’s dairy free cheeze pizza with a rice crust. On the right is Udi’s gluten free crust with tomato paste, arugula pesto, and Daiya mozzarella vegan cheese. I tried the Amy’s pizza a couple of weeks ago after an exhausting day. I was in a bad mood and didn’t want to put any effort into cooking. My sister finally got to meet her nephew!!! Even though I knew she was coming home, I couldn’t tell anyone because it was a surprise for her best friend’s bachelorette party. My immediate family knew, but I didn’t even want to tell any of my friends, for fear facebook postings would give her away. When my hands are tied up and time is of the essence, I’ve been relying pretty heavily on two things. Theme number one: snack plates Veggies, meatless meatballs, Stubb’s BBQ sauce, Mary’s Gone twigs, sweet potatoes, daiya cheese, GF tortillas… This was a meatless meatball round (WF / 365 brand is bomb). I go through phases with faux proteins. Beyond Meat strips are a fave. So are hard boiled eggs. But sometimes I just stick to nuts instead of a “meat” snack item. HOW!?! Seriously, how do SAHM / bloggers do it? I’m only 3 days into Kyle’s 10 days out of town and pretty sure I’m going to turn into an almond by day 5 at the rate I’m pounding through this Costco tub of roasted nuts.
