Oh happy day!  I love St. Patrick’s Day for several reasons: The start of March Madness Kyle’s birthday Green themed everything Boozing (to the nth degree) Random phrases like “sonny” and “me lucky charms” Of course I am one of those people who takes the green theme above and beyond…so prepare yourself for what’s to come. Work and Peacefood

This is one of the more bare work lunches I have packed… Don’t worry, the apple-less state of this photo was remedied once I took my lunch break.  Thank you Gracefully for providing such an abundance of eye candy organic fruit. Greens entered my bod in the form of spinach, brocc, and peas.  The rest of the salad ingreds included adzuki beans, chickpeas, corn and dried cranz. The Joys of Nursing

All I wanted to do on Monday was sleep in.  After my weekend of working (mixed with boozing at the office holiday party), I needed rest more than anything in the world (including hummus).  And yet, I still woke up at 8 am.  Oh well, I’ll take all I can get. Ode to the in-laws

It’s no wonder people are scared of their significant other’s parents; with movies like Meet the Parents, in-laws get a pretty bad rap.  Fortunately for me, this stereotype couldn’t be further from the truth.  I just got back from a weekend+ getaway with Kyle’s family and I couldn’t be more thrilled to be joining his family than if they were the sole heirs to the Whole Foods chain.  Not only are they amazingly accepting of my vegan lifestyle, but they go above and beyond to accommodate it, to the point of straight up spoiling me!… Read more >
