The best of Costco

Oh my gosh you guys, I went to Costco yesterday and literally squealed in the aisles due to all the new (totally awesome) things I found. Even though we mostly stuck to our list, there were a few things I couldn’t help but get.  The rest were added to my mental shopping list for next time though. Here are the highlights: Vicolo roasted tomato with goat cheese & fresh basil. Breakfast rotation

I have been eating the same thing (nut butter & jam) on repeat so I decided on one of my days off last week to do something special. Pancakes! These are gluten free but not vegan (I used an egg to bind them).  They turned out lovely and I’m sorry to say I didn’t follow a recipe at all, nor did I write down what I did as I made the batter. Losing sleep and links

We’ve hit a road block hiccup (fingers crossed?) in the sleeping schedule and I’m too tired to post much.   My little man rung in his 4th month with some crankiness and of course it aligns with me going back to work so I have huge amounts of mommy guilt going on…in addition to the normal desperation of trying to figure out what’s wronggggggg?  Isn’t it funny how parents ask their infants that knowing full well a response is out of the question.  Anyway.  He’s still an exceptionally happy baby so I’m sure it’s just… Read more >

No Bake Coconut Balls

No-Bake Coconut Balls [vegan, gluten free, FODMAPs friendly] Ingredients: 2 cup shredded unsweetened coconut 8 dates, pitted 3 tbsp brown rice syrup 1 tbsp water 1/8 tsp salt Directions: Pulse coconut and dates in a food processor.  Add in syrup and salt and continue to pulse.  Add water if needed (it will depend on the freshness of your dates).  I needed 1 tbsp water for the dough to stick.  Roll into balls.  Store in fridge or freezer.  These were so simple and so good.  I plan on making different versions in the future with peanut… Read more >
