Is it just me, or does my coffee froth look like a person running? I could be going crazy. It’s entirely possible. It’s actually the more likely scenario. Still, I couldn’t help but feel like my morning coffee was sending me subliminal messages. I ignored them and went for a bike ride instead. It was AWESOME. Before hitting the road, I had a bowl of oats with a chopped apple. Don’t be deceived by the above photo, though. This batch of oats was anything but average. I bulked up the 1/2 cup rolled oats with… Read more >

Just as I expected, you guys had such thoughtful responses to The Cove. It’s hard to not react with outrage, disgust, and horror when you find out such hideous things are going on in secret. It makes me want to take action immediately. Or at the very least do my part to help spread the word. So there you have it. Please see this film. As for Sunday. The post title pretty much sums it up. Breakfast didn’t really exist since I slept in so late. I made this bowl of oats just before the… Read more >

There’s quite a bit of confusion surrounding the difference between corn flour and cornmeal. They are not entirely different, but after doing further research, I found the following. 1. Corn flour is ground finer than corn meal 2. Corn flour has a stronger taste 3. Corn flour is more commonly used as an ingredient in a recipe, whereas cornmeal is a staple in many countries’ diets. 4. Cornmeal can be made from white, yellow, or blue corn (or any combination of the three). I chose Bob’s Red Mill Corn Flour on a whim. Theirs is… Read more >

In my last post I showed you the prep portion leading up to the start of my work week. I’m glad you all found it informative and inspiring. I promise it’s not as hard as it seems; and once you start doing it week in and week out, it becomes second nature. Yes, I do have some OCD tendencies, and it’s hard for me to imagine a world without checklists, but it’s also what allows me to eat the way I want to (healthy and quick) when things get crazy. While my Type-A personality can… Read more >

Many of you have expressed interest in a post dedicated to how I prep for the week. I have been reluctant to do this (read: lazy) because, quite frankly, it’s a ton of work…taking pictures throughout the process would only add on extra time…and that’s not even including the posting part. Today, however, I felt inspired. Here’s a brief look at my process of getting things organized. Goals: Chop raw vegetables Roast squash/potato/vegetables Make tofu/seitan Make quinoa Make Kyle something (lasagna or pasta in bulk) Miscellaneous dish (“tuna” salad, crock-pot stew, chewy oat bars, etc.)… Read more >
