When oozing is good

Ooze is a funny word because it’s either a really bad thing (puss from a wound?) or a really really good thing (caramel and chocolate from a cupcake center). I hate to bring up puss before sharing these photos, but I think you’ll agree they are delicious enough to overcome the gross introduction. The samoa cupcakes from Sweet Freedom Bakery left my mouth in a state of yearning (for more). Look at that sweet gooey center! This is the best kind of oozing you can ever hope to come across. Thanks to google, I found… Read more >

What I Ate

It’s been a long time since I did a “what I ate in a day” style post, but I feel like returning to my OG format for the a moment.  Here goes. Breakfast: Vegan & GF pancakes (made with Bob’s Red Mill mix and almond milk).  I didn’t use any kind of vegan egg substitute, I just left it out.  I also used only almond milk (rather than the water/oil combo they recommended). I topped it with warm peanut butter and banana slices.  Half the banana went into my mouth before it made it onto… Read more >

Coconut holes

Or macaroons.  Or dough bites.  Or balls.  Whatever.  The variety of names for these treats is endless.  They are essentially coconut and chia seeds held together by a little bit of liquid and nut butter.  So very simple.  I’m not claiming I invented them or anything – I’m sure there’s a version of these on many other blogs out there.  But here’s what went into mine. Coconut holes [vegan, gluten free, soy free, FODMAPs free – makes 9 golf ball sized holes] 1 cup + 1/2 cup shredded coconut 1/3 cup maple syrup 1 tbsp… Read more >

A three-fer

Not meatballs. I should have made a bigger batch of these coconut macaroon things because Kyle ate half of them before I even tried one.   Work food.  Banana.  Carrots.  Macaroons. It would probably blow your mind to know how many carrots we go through in our little hippie household.  I eat half a pound a day, minimum.  If our fridge were bigger it would be packed with orange.  As it is, we have one crisper drawer solely devoted to those two pound bags (plural). Almond milk is another thing we seem to restock at… Read more >

Nurse out of water

Ordinarily I don’t mind floating, but today I was SO not in the mood for it.  Fish out of water x 12 hours…blah. Don’t get me wrong, sometimes it’s nice to spend a day with a different patient population – like sampling yogurt, you get a small taste without having to commit.  But I also love routine (who doesn’t?) and after working yesterday, I was looking forward to having the familiarity that comes with a second shift in a row.  Even when patients are busy I’m still able to get a sense of rhythm by… Read more >
