A day in the life…

Of a very pregnant (over 40 weeks and counting!) lady…on maternity leave… Wake up 4+ times throughout the night.  Finally get up for good some time between 6-8 am. Drink weak tea with almond milk and maple syrup.  Wonder how much longer til you can guzzle caffeine again.   Make breakfast #1.  A bowl of oats with nut butter & bananas.  I usually have half the banana at a time since it seems to give me reflux now (realistically everything does).  Play on the computer.  Respond to emails and blog comments.  Make & prep food… Read more >

Gluten free quick bread

  Coconut Cranberry Banana Bread  [gluten free, yields 2 mini loaves] Ingredients: 1 cup oat flour 1/2 cup coconut flour 4 tbsp sugar 1 1/2 tsp baking powder pinch of salt 1 banana, mashed 1 cup vanilla greek yogurt 2 eggs 1/3 cup fresh cranberries 1 tbsp shredded unsweetened coconut (for topping) Directions: Pre-heat oven to 350 degrees F. “Five” balls

Dearest medjools.  You make everything taste like dessert.  And yet, you count as a fruit.  One of mother nature’s true gifts. Dearest peanut flour.  You’re so rare.  So special.  People have to seek you out and hoard you.   These two together are like…heaven.  No really.   I named these treats “five” balls because the ingredients are oh so conveniently organized in fives.   Ironically, the recipe yields more than five balls, but whatever.  I suppose I could have just made really large ones in order to honor the name.  But I didn’t.  Oh well…. Here’s a breakdown of a few of the meals from last week. First, the personal pizzas.   The only difference between Kyle’s pizza and mine was the cheese.  His was a cheddar and parmesan mix, mine was Daiya.   I used Vicolo organic corn meal crusts.  I’ve seen them at WF forever, but this was the first time I bought them.  Totally love them.  Going to buy them again and again and again now.  I can’t stress just how in looooove Kyle and I both were with these pizzas.   FYI, Vicolo is a San… Read more >

All over So Cal

This weekend Kyle and I visited my G-ma in Newport Beach, went to a friend’s baby shower in Fullerton, attended a wedding in Temecula, and stayed with Kyle’s parents in San Clemente.  If you do the math, that’s over 300 miles of driving (6+ hours!!!). Check out how fun this looks. Just our luck – gas prices reached $5.50 per gallon this weekend!  Isn’t that fabulous?  Of course record breaking fuel prices would coincide with such a jam packed weekend on the road.
