Tweak-er

My first attempt at oatcakes was a tasty one, but the texture didn’t work. The proof was in the pudding-like consistency. So I tried again.  Much better. Now I feel confident sharing this success story with you all. Butternut banana oatcakes 1/2 cup rolled oats 1/4 cup whole wheat flour 1/4 cup NuNaturals stevia baking blend chia seed “egg” (1 scoop chia seeds + 1/8 cup water) 1/3 cup pureed butternut squash 1 banana 1 tsp cinnamon non-dairy milk (optional – I used a touch to thin the batter a bit at the end) agave… Read more >

Social Light

This weekend was a reminder of why Kyle and I moved back to the West Coast.  No offense NYC, but when it comes to the weather and the social scene, California is where the party’s at!  I may be well out of college, but that doesn’t mean I’m an old fart (yet).  This weekend I was drawn to keg parties and tailgates like a moth to a flame.  I don’t mind a seedy bar once in a while either. But before I get to the brew-fueled festivities, let me back up to Friday. You like… Read more >

It all evens out

Last week I had one of those days where my appetite just wouldn’t quit.  I hate those kinds of days, honestly.  They either mean my metabolism is psychotically fast (here’s hoping!) or I’m nursing a tapeworm (shudder).  Unfortunately, I didn’t handle it in a healthy or mindful way.  My stomach seemed to be growling constantly, so I took advantage of it and (ultimately) went overboard.  I wasn’t going to blog about it (because, quite frankly, the actual eats weren’t exactly newsworthy), but then I realized how I reacted the following day was worth sharing with… Read more >

Full day

Full of errands, full of food, full of activity, full of sun, full of living.  How else would I start the day?  Alongside the apple was a new green monster blend.  I double fisted it with the spinach, which is why it turned out such a pretty color.  The other ingreds included a whole frozen banana, 1/4 block silken tofu, ice, ice and more ice. It looked neon in person, but isn’t quite as bright in the photo.  Ah well, just take my word for it – ‘twas muy verde.  After getting errands done around… Read more >

Days that start with the letter “s”

Saturday was a work day.  F to the U.N.  Packed nom-noms are some of the usual suspects, as well as some new members.  Carrots, salad, apples, bars, and a baggie of goodies.  Tummy-wise, I felt a little bit better, but certainly not great.  In the non-transparent bag: almonds, carob chips, raisins, pistachios, cashews, and pretzels. This Belle Bananas Foster flavored 18 Rabbits bar was another winner.  I’m not usually a banana nut fan, but this may be the bar that changes that.  It’s oaty, with good breakability, perfect level of sweetness, and reminds me of… Read more >
