butternut squash

Soup Station

This was my vision for dinner last night. Turned out pretty much exactly how I pictured it! Bonus: it was way tastier than I could have ever hoped for! The butternut squash puree is outstanding enough to stand on it’s own…add in pasta, sautéed vegan sausage, and steamed kale…oh baby!   It’s definitely worth repeating.  The reason we kept the meal’s components separate was because I wanted kale and Kyle didn’t.  He was kale-d out from the previous night’s dinner (I, on the other hand, could eat leafy greens exclusively for weeks on end…).  So… Read more >

The whole day

I had to divide this into eight (8!!) portions to grind. 16 ounces of Starbucks Christmas blend later I had grounds from wall to wall in the kitchen and my hands were permeated with the delicious aroma of java. Good thing you can’t absorb caffeine intradermally. Or can you? I just found out our apartment in Buenos Aires has a coffee maker. I’m SO looking forward to Argentinean roasts. Can you tell my one-track-mind is completely vacation focused? I still have a couple more work shifts, so I’m doing everything I can to keep my… Read more >

Thanks for the veggies

Rhetorical question, but how awesome does my plate look??   I know.  So my Thursday morning wasn’t the greatest.  Like I mentioned before, I was a zombie when we arrived at Kyle’s parents house late on Wednesday…and even though I slept straight through the night (something I rarely do in my own bed), I still couldn’t seem to get myself up in the morning.  So I slept in a bit while Kyle had breakfast solo. Eventually I pried myself from the sheets and stumbled outside for a brisk jog around the neighborhood.  I intended… Read more >

Full Friday

Forget this Black Friday business, I’m too stuffed to function. I am actually having a hard time looking at the food photos I have from Thanksgiving…but the pictures of the kiddos…I could look at those all day.   It may be a while before I can comfortably post Thursday’s meal(s), but I have pre-feast work food to share.   First up, a peanut flour/oat breakfast.    In addition to oats and peanut flour, I stirred in some home-made granola and chia seeds as well.  Sometimes my breakfast bowls look semi-watery and I occasionally get questions… Read more >

sabadomingo

I worked this weekend which was whatever.  I don’t feel like talking about it.  I do feel like sharing my packed up eats though.    I made a pumpkin raisin chia pudding the day before, so I added some of it to my overnight oats, along with a banana.  Here’s the mix all stirred up together…   Soaking raisins plumps them up to such a delightful state! Here’s the rest of the goodies…carrots, corn nuts, granola bar, banana bread, candied ginger, salty dark chocolate. I have been storing these dried fruit and nut granola bars… Read more >
