My first attempt at oatcakes was a tasty one, but the texture didn’t work. The proof was in the pudding-like consistency. So I tried again. Much better. Now I feel confident sharing this success story with you all. Butternut banana oatcakes 1/2 cup rolled oats 1/4 cup whole wheat flour 1/4 cup NuNaturals stevia baking blend chia seed “egg” (1 scoop chia seeds + 1/8 cup water) 1/3 cup pureed butternut squash 1 banana 1 tsp cinnamon non-dairy milk (optional – I used a touch to thin the batter a bit at the end) agave… Read more >

After getting back from a weekend at home, I made myself a ridiculously ambitious to-do list. Mondays already suck, this was overkill. Moody monday coffee. After the caffeine hit my brain I was feeling energetic and began to tackle my list with a carpe-diem-style vigor. Bring it. Breakfast went from the above, to the below in ~30 minutes. Butternut banana oat cakes Texture-wise it still needs perfecting, so for now no recipe, but I’ll get it up soon. It held me over for hours. Crazy talk, right? When lunch time rolled around I had alittle… Read more >

So conflicting. The reason I don’t like rise-and-shine cardio is because I suck at it. I’m slow in the mornings. I don’t really start to function until an hour (or two, if I’m being honest) after I’ve been awake. The route I took Saturday morning typically takes me 24 minutes (when I do… Read more >

Cough-E & a Caramel Apple Diggin’ the froth? Do it! Do the Stonyfield people know that their Oikos greek yogurt is borderline sinful when combined with apples? Caramel apples for breakfast with NO guilt whatsoever? Uh, that gets two thumbs up. Now that’s a dessert that Gigi can start her day with, controversy free. Maybe. Lunch was so boring, I almost don’t want to show it. Boca vegan burgers open faced on Vermont soft wheat bread with Tribe roasted red pepper hummus. You can’t go wrong when combining bread and hummus, so as basic as this… Read more >
