How to prep for the work week

Many of you have expressed interest in a post dedicated to how I prep for the week.  I have been reluctant to do this (read: lazy) because, quite frankly, it’s a ton of work…taking pictures throughout the process would only add on extra time…and that’s not even including the posting part.  Today, however, I felt inspired.  Here’s a brief look at my process of getting things organized.  Goals: Chop raw vegetables Roast squash/potato/vegetables Make tofu/seitan Make quinoa Make Kyle something (lasagna or pasta in bulk) Miscellaneous dish (“tuna” salad, crock-pot stew, chewy oat bars, etc.)… Read more >

I will eat it. Now since I want you to get it just right; here’s how to build the most be-udi-ful breakfast bowl. Just in the nick of time

As I mentioned yesterday, we left bright and early (6:30 to be exact) to head back to LA.  And as painful as it was to get up at 5 to work out before hitting the road, it turned out to be WELL WORTH it. The Eves Before the Eve

Happy 2011 everyone!  I know I promised the giveaway winners today, but I’m not quite ready yet… Since I’ve been MIA for the past few days, I have some catching up to do first.  Even though I got the 31st and 1st off of work, I was still at the hospital for the rest of 2010.  And so before ringing in the New Year, I packed up my lunches as per usual. AM in the PM

Check out my dinner! Vegan waffles made from scratch :)  The recipe is so hearty and delicious (and also top secret), you may or may not recall why…but I’ll get back to that later.  For now, breakfast. I suppose this could be seen as a parfait of sorts. On the bottom: pumpkin oats with 1/2 cup pumpkin puree, 1/2 cup whole rolled oats, NuNaturals liquid stevia, and Tropical Traditions shredded coconut.
