It’s getting to the point where making my meals are almost Top Chef challenges. The fridge is nearly bare, save for some lingering leftovers and oddities that have been hiding in the back for quite some time. Case in point, this yves veggie cuisine meatless deli turkey. When I first went vegan, I used to make sandos out of this stuff (or some similar brand) all the time. I had completely forgotten about it until I discovered it the other day. Since I haven’t had real deli meat in years, this mock meat… Read more >

Recently, I got an email from a reader (hi Elaine!) with some vegetarian cooking related questions. I figured rather than respond via email, I’d answer in a post (in case others are wondering too). Since there are quite a few questions though, I am going to go through them one at a time. And so continues the “readers request” post series. This is especially important when it’s a delicious dressing like Follow Your Heart’s vegan caesar. It helps if you sing while you do it: shake shake shake, shake… Read more >

Oh my gosh April has been non-stop and it’s hardly even started! This past weekend alone was ridic…Finn turned two, my parents came into town, and a bunch of friends got together for the MS walk…oh and then there was my sister-in-law’s wedding shower. Yeah. That’s normal. I truly love being with family and friends, so this weekend was all about them and not so much about nursing or blogging. In the words of Jackie O, “I want to live my life, not record it.” And yet, I did record some of it…just not very… Read more >
