Quick meals these days! My philosophy: Throw something on toast or a bed of lettuce and call it a day. [The Essential Baking Co] GF toast with avocado and goat cheese. GF toast with almond butter and a fried egg. GF toast with goat cheese and smoked salmon and balsamic glaze (carrots and grapes on the side). GF toast with goat cheese and eggplant “bacon” Had this a few times…topped with fried eggs to make it extra snazzy. This weekend was a (partial) work weekend. And it was INSANELY hot. Fall is nowhere in sight and while I usually love 90 degree temps, my hormones are not on the same page. At all. Alternative title for this post: the day I ate an entire avocado. Oh look! A non-egg breakfast! We were out of eggs, so the night before I made a vegan alternative. Just silken lite tofu, nutritional yeast, & Bragg’s liquid aminos. It’s been a long time since I did a “what I ate in a day” style post, but I feel like returning to my OG format for the a moment. Here goes. Breakfast: Vegan & GF pancakes (made with Bob’s Red Mill mix and almond milk). I didn’t use any kind of vegan egg substitute, I just left it out.
