It’s been a long time since I did a “what I ate in a day” style post, but I feel like returning to my OG format for the a moment. Here goes. Breakfast: Vegan & GF pancakes (made with Bob’s Red Mill mix and almond milk). I didn’t use any kind of vegan egg substitute, I just left it out. I like to make more luxurious breakfasts for myself on the days that I work night shift. I try and sleep in as long as possible and make breakfast fare later in the day as a means of tricking myself into thinking it’s early in the day (when it’s actually the afternoon).
