Some days of work just rock. Plain and simple. I leave the hospital feeling like I’m so lucky to have found a job that I not only enjoy, but that allows me to help people. What’s that saying? ”Choose a job you love, and you will never have to work a day in your life.” [Confucius] Yesterday was a great day. There wasn’t anything extraordinary about it. In terms of my patient load, it was pretty average. And yet, I left the hospital feeling so completely content with the 12 hours I had just finished. … Read more >

I worked Monday and Tuesday. This means that I’m now playing catch up in life and on the blog. Being out of town this weekend meant that my pre-work food prep was minimal. However, Kyle and I stopped on the way home from San Clemente for a huge grocery shopping trip, so it wasn’t a complete scavenger hunt. For breakfast I mixed up my normal oat routine by adding in wheat bran. Also in the mix was a chopped up baby yellow delicious apple, cinnamon, stevia, and raisins. The wheat bran didn’t change much in… Read more >

What the [bleep] was up with my appetite today!? Good thing I had packed a beastly amount of food because, lemme tell you, I woke up with a hunger that just wouldn’t quit. As per usual, I started the day with Jillian (Level 3 of the Shred). I felt great throughout the 20 minutes of this, that, and the other – it’s crazy how energetic it gets me at 4:30 am. Yes, I do have some OCD tendencies, and it’s hard for me to imagine a world without checklists, but it’s also what allows me to eat the way I want to (healthy and quick) when things get crazy. While my Type-A personality can… Read more >

Many of you have expressed interest in a post dedicated to how I prep for the week. I have been reluctant to do this (read: lazy) because, quite frankly, it’s a ton of work…taking pictures throughout the process would only add on extra time…and that’s not even including the posting part. Today, however, I felt inspired. Here’s a brief look at my process of getting things organized. Goals: Chop raw vegetables Roast squash/potato/vegetables Make tofu/seitan Make quinoa Make Kyle something (lasagna or pasta in bulk) Miscellaneous dish (“tuna” salad, crock-pot stew, chewy oat bars, etc.)… Read more >
