Ok, I know. It’s semi-odd to be roasting winter squash in June, right? But I had a butternut and delicata squash hanging around the kitchen and figured I better seize the day. So I hacked my way into them, lubed the skin down with coconut oil, and popped ‘em in the oven at 375. I made sure to salvage the seeds to roast too. Meals and musings from a marvelous Monday… All together now: chia pudding/overnight oats, big salad with leftover quinoa, apple, apricot, WF ciabatta roll, Sabra hummus. I found these at Whole Foods and thought they’d be perfect for lunches. I usually bring a pita, tortilla, or a slice of sprouted bread to dip in hummus, but Ciabatta rolls sounded like the perfect change up. I’m not an overly dramatic person (must be the residual effects of my tomboy youth…) but I have to say, the lack of candied ginger in ALL the local Whole Foods stores has me freaking out. I am officially out. Like Kyle’s chapstick stash, I had back-ups upon back-ups, but they are all depleted now. Yikes. Hoarding fail. It gets worse! If I had to summarized Monday through Thursday in a single post…well…I can’t, so I don’t know how to end that sentence.
