Carmageddon

First things first, I made coconut blueberry scones yesterday, and I am really pleased with the outcome.  The recipe will be up soon.  Here’s a teaser…   I had three over the course of the afternoon, very much spoiling my appetite for dinner.  They are friggin’ delicious.  Anyway.  I had one before work (breakfast #1).  And then I brought these goods for the rest of the day. Breakfast #2 – oats with silken tofu, raisins, and NuNaturals’  vanilla stevia. Lunch – salad with mixed greens, shredded zucchini, carrots, red quinoa, kelp noodles, and seitan. Snacks… Read more >

Unpackaged

Finally!  A bit of a break from the hospital.  The past few days have been busy busy because I’m out of town this weekend which means all my shifts got crammed into the beginning of the week.  What that means for you all is this post will be full of several pre-packed work meals.   L to R: Bread, Salad, Dried Fruit & Nut Bar   The bread was a fresh french roll from WF bakery.  It had a ménage à trois with hummus and carrots later in the day.  Sexy.  The salad was a… Read more >

Can’taloupe

A few fruits, like grapes and melon, give me reflux trouble.  It’s not that I can’t eat them, it’s just that I have to eat them alone, stay upright afterwards, and not exercise.  Cantaloupe is one of the main culprits, but I think I found a way to work around it.  Blender! Ignore the color, this was awesome.    It was also crazy healthy – packed with vitamins, minerals, and healthy fats! See that green powder?  That’s the latest item to join the hippie kitchen.    Um.  Whoa.  What I like about this Antioxidant Omega-3… Read more >

A whirlwind work weekend

I’d try to label these meals, but since I’m still on a bizarre night shift schedule breakfast is dinner, dinner is lunch, up is down, left is right…who knows…time is irrelevant in my life now.  I’m not really normal anymore. I made a PB & AB sando.  Yeah, skip the jelly, my sandwich was all about nutbutters.  I ate some straight outta the jar too.  I have no shame.  I just sat on my butt, spoon, jar, spoon, jar, spoon…you get it.  It occurred to me (after slowly licking 1/2 cup of nut butter) that… Read more >

French Open Fever [part 2]

This is a continuation of my previous Roland Garros post.   Novak…on a roll… John McEnroe and Mary Carillo! Isn’t it cute that they were childhood friends, then both became tennis studs, and now they are co-sports announcers?  After Djokovic and Del Potro were done I went to survey the stadium’s food situation. I wasn’t hungry for lunch yet, so I was scoping out the snack options.  I ended up buying some fruit (really the only vegan choice aside from raw carrot sticks and applesauce), which cost me half my monthly paycheck.    Roland Garros… Read more >
