My ability to sleep normally is gone.  And I’m fairly certain it’s going to be that way for the rest of my life.  Despite my state of perpetual exhaustion, this weekend was f.u.n. Leftovers multiple ways

Last weekend we went to Veggie Grill for takeout.  You get a free entree for your birthday and since you have until the end of the month to use it, I was almost out of time!  I decided to try something new (I figured since it was free I should order something that I wouldn’t ordinarily get).  I hate to say it but I may have OD-ed on the All Hail Kale Salad. Birthday week fun

My birthday week started last weekend with apple picking. After that we headed to lunch at Mendocino Farms.  As much as I love the place, it’s not conveniently located for me.  But since we had already been in the car for well over an hour, we figured what’s an extra few miles out of the way? All over So Cal

This weekend Kyle and I visited my G-ma in Newport Beach, went to a friend’s baby shower in Fullerton, attended a wedding in Temecula, and stayed with Kyle’s parents in San Clemente.  If you do the math, that’s over 300 miles of driving (6+ hours!!!). Check out how fun this looks. Just our luck – gas prices reached $5.50 per gallon this weekend!  Isn’t that fabulous?  Of course record breaking fuel prices would coincide with such a jam packed weekend on the road. I just wanted salad dressing

I feel like I’m clinging onto summer with this breakfast.  Home-made banana pancakes with strawberries and peaches.  This was my first sweet breakfast in a long time.   I finally finished off that massive batch of vegan gluten free pancakes that I made a while back, so I had to do actual work in the morning for these.  The effort was worth it, but I wish I’d had the energy to make a huge batch so there were leftovers.  Part one of lunch was half a sweet potato with tofu scramble.   I’ve been on… Read more >
