Readers request: My Go-To Dinners (Five Fast Meals)

Some of these may seem lame or boring, but when you want a semi-home-made (healthy) meal lickety split, you can’t be too picky.  While I mostly prep for the week in advance, I do leave some days open.  These "wing it" dinners are typically made from either leftovers (revamped to be something else) or various ingredients I know I have ready in the fridge.  As I’ve shared before, I keep certain staples on hand at all times for exactly these scenarios. 1. Overly FODMAPs heavy

Old to new

You all know I’m frugal.  And that I like re-working leftovers.  This is not news. So when Alene & Ethel sent me home with extras from the shower, I was really excited to transform them into new dishes not have to cook for a while. Orzo salad with sun dried tomatoes. Quinoa with edamame, kale, and tomatoes. Both of these dishes made their way into the weekly dinner plan immediately. A rough week

Unlike last week’s meal plan, I kept this one a bit more flexible due to the uncertainty (and chaos) on the calendar.  In addition to my usual work schedule, I had a four hour class (for work) and maternity unit tour.  That meant I’d be at the hospital all five days of the week.  I can’t get away from the place!  Kyle was also busy with work – presentations, dinner meetings, etc.  Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them.  Instead I just figured… Read more >
