I’ve been keeping up with weekly meal planning for almost a year now – with random weeks off due to travel/holidays/etc.. But for the most part, it’s been a very successful technique in keeping our food budget in check. This week was fun. Busy and not busy in perfect amounts. One thing I’ve noticed about working part time is there’s a big (HUGE) difference between 2 shifts and 3 shifts. It may not sound like it, but I feel like the time off allows me to get so much more done. And rather than fill it with errands and chores, I can actually hang out and relax and enjoy myself. When my hands are tied up and time is of the essence, I’ve been relying pretty heavily on two things. Theme number one: snack plates Veggies, meatless meatballs, Stubb’s BBQ sauce, Mary’s Gone twigs, sweet potatoes, daiya cheese, GF tortillas… This was a meatless meatball round (WF / 365 brand is bomb). I go through phases with faux proteins. Beyond Meat strips are a fave. So are hard boiled eggs. But sometimes I just stick to nuts instead of a “meat” snack item. Whenever I get a recipe out in real time it’s because it was so good I can’t not share it immediately. I basically dropped everything (except my son of course) to write this post.
