I finally did it. I got over the “ick” of Mexican food that the stomach bug I caught in Cabo and morning sickness did to me. Kyle’s very happy about this since he’s been in taco withdrawal. Taco Night!! The prep for each ingredient was minimal. home-made baked taco shells (new method!) vegetarian refried beans lettuce Sabra guacamole Sabra salsa mexi-rice First up, the taco shells. I can’t remember where I heard about this trick, but it stuck with me and I knew I had to give it a shot. Pre heat oven to 375… Read more >

Long overdue recipe coming ‘atcha. Finally. This one couldn’t be easier guys. No measurements required. And it’ll be delicious. Promise. Here’s what I did. 1. Cover ~1/4 – 1/3 cup dry beans (I used black and adzuki) with water (about an inch high) for 5 hours on low heat. 2. It’s impossible for me to forget about our weekly cooking dates because Kyle entered them in our joint google calendar. So I get reminders emailed and texted to me when it’s time. He’s almost as type A as I am… [Fact: I’m only pretending I don’t find it attractive. In reality, I love his nerdy traits more than anything – I just don’t want it to go to his head.] So anyway…Kyle’s parents came to visit and I cooked them dinner. Happy Birthday Kevin!
