What can I say?

This weekend was just plain awesome.  I don’t know what else to say.  My sister came to visit.  My friends threw me a baby shower.  And I just felt so loved.  And fortunate.  Things are good. Thursday night was tree decorating and burrito bar. On Friday, my sister arrived!  Hooray 🙂   While she was doing the oh-so-hideous I-5 drive, I woke up early, made breakfast (the standard egg and GF bread with Earth Balance), and read.   I had a snack a little later.  Rice cakes with nut butter & dried fruit is becoming… Read more >

Classic combination

Cornbread and chili.  It’s one of those combos that you always pair together.  Like peanut butter and jelly.  Or…I don’t know…something else.  I can’t think right now.  My brain is slow these days. It’s such comfort food.  Very appropriate for the changing season.  Christmas will be here before you know it.  And then, holy crap, it’s full on winter.  To be fair, winters in Los Angeles may as well be spring on the East Coast since it rarely dips below 50.  But I still have the heater running so that counts for something (poor insulation,… Read more >

Crunch Quota

First order of business, the gardein winners.  #8 Robin O., #25 Erica Wollman, and #28 Debbie.  Email me with your addresses. Now.  Let’s do a full day of food, okay?  This is from over a week ago. I woke up way too early after sleeping way too little.  Nothing new. I had milky coffee.  And holiday waffles with an egg. Oh gorgeous froth. About two hours later, I was hungry (again), so I made a sweet potato hash. I made it the same way as I previously posted. You’d think the coconut oil would have… Read more >

Details details

Here’s a breakdown of a few of the meals from last week. First, the personal pizzas.   The only difference between Kyle’s pizza and mine was the cheese.  His was a cheddar and parmesan mix, mine was Daiya.   I used Vicolo organic corn meal crusts.  I’ve seen them at WF forever, but this was the first time I bought them.  Totally love them.  Going to buy them again and again and again now.  I can’t stress just how in looooove Kyle and I both were with these pizzas.   FYI, Vicolo is a San… Read more >

A rough week

Unlike last week’s meal plan, I kept this one a bit more flexible due to the uncertainty (and chaos) on the calendar.  In addition to my usual work schedule, I had a four hour class (for work) and maternity unit tour.  That meant I’d be at the hospital all five days of the week.  I can’t get away from the place!  Kyle was also busy with work – presentations, dinner meetings, etc.  Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them.  Instead I just figured… Read more >
