I made a Mexi-kale salad for lunch. Sure, I just coined the term, but I think it fits. On top of the kale was wakame seaweed, butternut squash, cherry tomatoes, black beans, and some salsa (added later so it wouldn’t sogg-ify). Yes, I realize the involvement of seaweed in a south-of-the-border themed salad may be a bit of a stretch, but can’t I just claim poetic license on this one? Merry Christmas everyone!! Unfortunately, I worked today (Christmas day), but yesterday (Christmas eve) was fun for several reasons. 1. I got the day off of work (although I still had to wake up at 5 am to make sure nobody called in sick…kinda like being an on-call RN). 2. I had a great brekkie. 2. My parents were in town this weekend! :D They arrived Saturday in the wee early hours and left yesterday (Tuesday afternoon)…and although they were only here for four days (two of which I had to work 12 hour shifts) we still had so much fun. Doing three (12 hour) shifts in a row is my least fave thing to do. I avoid it like the plague swine flu.
