This is how my food prepping has been going… TOFU you are my b!tch Clearly I have been a busy little bee on my days off. Busy with LA SOYA that is! To provide myself with several meal options, I mixed things up in the seasoning department. From L to R: plain cubed, plain slabs, Whole Foods’ asian seasonings, and chili powder/paprika). After some bonding time in the oven, they came out looking like this: Shrinkage. Spice-ayyy. And here’s how I’ve been gittin’ my soy on. Meal numero uno: Big salad with mayj crunch, including… Read more >

I didn’t intend for this to be a stew, but the extra juice was too good to waste. This dish was born from my desire to try new things…and a while back I mentioned that I wanted to experiment with new types of ‘shrooms (in a legal way)…so I bought some Shiitake mushrooms from Whole Foods and started brainstorming what to do with them. It took me a while to decide how to incorporate them into a recipe, but then a light bulb went off (does anyone else experience cooking related “AHA moments” while… Read more >

Moving on to the last of the AAAA (refer back to part 1 & part 2 if you missed it)… 3. The last issue I want to tackle relates to my days off. I cut myself MAJOR slack on work days (probably more than I should). But let’s face it, completing a 12 hour shift shouldn’t equate to a get-out-of-jail-free card. It’s not brain surgery (it’s heart surgery –… Read more >

On that note, I share with you: Spaghetti squash mexicana Now I’m not sure if a black bean & avocado salsa qualifies a dish as Mexican…but that’s the name I’m going with 🙂 As the colder months set in, I’m constantly trying to find a way to marry what’s seasonal and local (on the East Coast) with flavors that are familiar from my upbringing (on the West Coast). I’m not sure… Read more >

As far as work weekends go, this one was pretty sweet. For some reason I was only scheduled to work Saturday (weird)…so having both Sunday AND Monday off basically felt like a full weekend. I’ll take it! As a result, I had some QT with my beau PLUS I got in some decent exercise. Being January and all, my typical intensity of exercise has been scrapped and I have very minimal goals: get sweaty on my days off of work. Granted, I don’t have any actual goals or anything for the non-winter seasons, but in… Read more >
