Success number one with coconut flour baking was enough of a confidence boost to encourage me to try again. So I did. This time with a few of the super ripe bananas we had on hand. Success number two! Because the bananas were almost entirely brown I didn’t think much sugar was necessary and I was right! This bread is sweet in a way that doesn’t taste “healthy”. I loved it. Making quick breads is really as easy as it gets. Kind like learning your A,B,C’s – once you figure out the basics, it’s a snap! I promise I didn’t plan the name of this bread around that little theme, but it was too perfect to NOT call this ABCD bread. If you like dates, you will like this bread. From Davis, it’s not too long of a car ride to Lake Tahoe! And since we left straight from swim lessons (again!), we had a sleepy babe for 80% of the ride. This is a small snack. The “before” photo is so clean. Let me tell you, persimmons make one hell of an “after” photo. Like a blood bath! Naps are complicated. When they happen, I’m on cloud 9.
