Work and what-not

I made a Mexi-kale salad for lunch.  Sure, I just coined the term, but I think it fits.  On top of the kale was wakame seaweed, butternut squash, cherry tomatoes, black beans, and some salsa (added later so it wouldn’t sogg-ify).  Yes, I realize the involvement of seaweed in a south-of-the-border themed salad may be a bit of a stretch, but can’t I just claim poetic license on this one? Ode to the in-laws

It’s no wonder people are scared of their significant other’s parents; with movies like Meet the Parents, in-laws get a pretty bad rap.  Fortunately for me, this stereotype couldn’t be further from the truth.  I just got back from a weekend+ getaway with Kyle’s family and I couldn’t be more thrilled to be joining his family than if they were the sole heirs to the Whole Foods chain.  Not only are they amazingly accepting of my vegan lifestyle, but they go above and beyond to accommodate it, to the point of straight up spoiling me!… Read more >

Cold weather challenges

It’s been pretty cold lately, and with the change in weather comes several personal challenges.  Comfort food.  Why is it called that?  It certainly doesn’t leave you feeling comforted.  For all intents and purposes, it should be called UNcomfortable food, because of how it leaves you feeling.  But then, who doesn’t crave warm foods during the cold months?  Sure, there are healthy hot dishes, but soup gets old, and suddenly I find myself drawing a blank on the meal creating front and resorting to some stereotypical (aka less than healthy) alternatives.  Because of this, the… Read more >

D.C. (part 1)

We crammed so much sight seeing into this past weekend, I hardly know where to begin.  Please excuse my lack of eloquence, horrible sentence structure, and tragic grammar as I recap piece together the past 72 hours (it was Halloween, there was alcohol, and I have the tolerance of Abigail Breslin).
