I’m going with a minimalist approach.  Inspired by the farm fresh produce of the area, the day centered around fruit.  Four courses of it to be exact. Pluots + pink ladies Ditto + raspberries Apple count thus far…four. Make that five. Eventually I moved away from the fruit.  But I didn’t stray too far.  Produce how I love thee. Welcome to Boxx

Confessions that you probably already know

Family size.  Party platter.  These words mean nothing to me. I can make a meal out of said portions without batting an eyelash.  I also have no issue with eating veggies and hummus for breakfast.  I also have no issue with eating “breakfast” at noon. Or drinking coffee, tea, and iced tea until my pee is clear. I also enjoy eating the same things several days in a row. Out with the old, in with the new

My latest quinoa salad was fantastic, and the best part was that it yielded way more than I expected! What’s a girl to do?  This was an everything but the kitchen sink everything in the fridge kind of salad…including a Strawberry Shortcake coloring book.  It had leftover broccoli, leftover sweet potatoes, leftover quinoa, and a new product too! Keen on quinoa

My titles are just oh-so-clever, aren’t they? In my previous post, I professed my love for Terry Walters and her brilliant cookbook, Clean Food.
