I have a formula that I use to make dinners in as little time as possible, but it relies on food prep. I always prep ahead of time. Have I convinced you to do the same yet? I feel like a broken record, but the posts that seem the most basic and obvious to me still get the most follow up questions. So. About that “formula.” Carb: usually a whole grain like quinoa or rice, but sometimes I opt for noodles, and sometimes I just turn to bread Fat: avocado, nut, oil, something Green: veggie… Read more >

I think there’s a misconception about how I eat. For every new recipe I create and share with you guys, there are five others I don’t show because they look like this… Oatmeal with melty peanut butter, cinnamon, and raisins. Not exactly reinventing the wheel with this one. I don’t have magic spells that bake cakes while I’m at work (Sleeping Beauty reference anyone?), nor do I have ingenuity oozing from my pores. Especially after 12 hours of nursing. Simple is fine by me. So whether it’s oats with the works or… Read more >

I just want everyone to know that’s how I read “WIAW.” Yes, I’m weird. So each week, when Wednesday rolls around, and the whole blog world shares their “What I Ate Wednesday” posts, I’m constantly doing Indian chants in my head. Better than out loud I suppose… Maybe you want to click away from my crazy blog now. Or maybe you’ll read WIAW like that from now on, too. Sorry. Yes, I usually do something each day of the week, but I pretty much figure it out that day, depending how I feel in the moment. I work 3 days a week, so on those days I stick to AM… Read more >

I leave for work and it’s pitch black outside…12 hours later I leave the hospital and it’s again darkness. I can’t really complain since I spent Friday on the beach with Kyle (summer sun in October, what whaaaat). But I worked this weekend and tried to take a photo out the kitchen window before I left…just to show the lack of light. Didn’t really work. :( It’s so dark out, all you can see is my reflection. My breakfast is far more photogenic. Quinoa on quinoa? Why not! I added Sweet Almond & Quinoa… Read more >
