The newest trend

I have the coolest friends.  Ever since we started budgeting my besties have been awesome about making dinners together (as opposed to expensive meals out).  Last Friday we made vegan tortilla soup with Ethel. Sometimes it’s hard to snack well

Not a typical statement (or opinion).  For me at least. But I’m being honest here. Between the hours of noon and 5 pm, I graze.  Meals have no room here anymore.  And I’m not super proud of what has been going in my mouth this last week.  It’s not terrible stuff.  But it still leaves me feeling blah.  I can do better. I miss well balanced full meals.  They’re easier to build – with all the macronutrients represented.  And they leave me sated for hours (until my next full meal).  Grazing is confusing.  I’m not… Read more >

The weekly menu

Since a lot of people have been interested in our budget friendly meal planning, here’s what we had this past week.  [Spoiler alert: they’re all really inexpensive dinners] Monday Egg noodles with teriyaki tofu, broccoli, & cashews The organic broccoli was leftover from one of last week’s dinners.  The roasted salted cashews are a pantry staple.  The egg noodles were on sale at WF (we used half of the 1 lb bag/$1.69).  The organic tofu was from WF (I baked the whole block/$1.69). I feel like this is what every third trimester soon-to-be-mom says at some point, but to hell with the cliché.  I HAVE NO MORE ROOM.  Ugh.
