Recently I’ve been making the fruits of my labor into delicious meals. I don’t know where this love for pesto suddenly came from, but it’s really nice to be able to pick your own food and prepare it in the same day. Thriving basil and parsley plants for the win! De Boles GF penne for me, 365 whole wheat spaghetti for him. Nuts, hemp seeds, basil, parsley, olive oil, plain almond milk, pasta water. Contrary to what my posting may indicate, I do still work! Sorry I’ve been withholding my packed eats from you guys. I have only been taking pictures of 50% of them, though, so here’s what I’ve got. Hope this helps you with some ideas! Oats. Veggies. Pretzels. Sabra hummus (x2). Lasagna (leftover). Cookies. Apple. Candied ginger. Oat preference as of late: nuts, cinnamon & dried cherries. I hit the bagel sammie jackpot with this one. What you’ll need: Udi’s GF bagels Artisana’s raw cashini butter LightLife’s organic smokey tempeh strips organic egg First you toast the bagel. I store mine in the freezer, though, so I had to thaw it first, then toast it. If you’re lazy (or in need of a breakfast bagel stat) you can nuke it in the micro for 20 seconds before putting it in the toaster. Then you spread cashini butter on one half of the bagel. Do not be deceived by the beauty of this plate. The tortillas may as well have been scrambled up with the tofu for all the good they did as a vehicle for the stuffing. Needless to say, this was a fork and knife meal. This was one of my first forays in the world of no wheat. I’m not too impressed.
