Meeting the Redwood Hill farm and goats

Four score (and a really long time ago) I went to visit the Redwood Hill Farm dairy and creamery.  I’m obsessed with their goat’s milk and lactose free dairy products, and they were nice enough to reach out to me to see if I was interested in taking a tour of the place.  Ummm, yes please!!   They were so thoughtful, in every aspect…arranging for me to meet the owner Jennifer….giving P a stuffed animal goat…touring the dairy…meeting the goats…and sending me home with mega samples!  Not just of cheese either!  They grow TONS on… Read more >

Sweet & Savory Breakfast Pie

Making breakfast dishes in casserole pans is my new favorite hobby.  It makes the morning run so smoothly when there’s already food prepared.  All you have to do is cut out a piece and (re)heat it in the microwave.  So I can shower and Kyle can serve himself breakfast one-handed while holding P.  Don’t get me wrong, Kyle’s certainly capable of cooking things for himself.  It’s just nice to use teamwork when it comes to our party of three operations.  We take turns sleeping, exercising, working…so why not cooking and eating.  It would be… Read more >

Holiday Party Recipes

These are some of the dishes and plates we served at my parents’ holiday party.   Caprese Skewers Ingredients: fresh mozzarella balls cherry tomatoes basil leaves Directions: These are self explanatory.  Using toothpicks or small skewers, pierce tomatoes, then basil leaf, then mozzarella.  If the basil leaves are too big, you can fold them in half or rip a smaller portion.  If you can find mozzarella balls that are marinated in Italian seasonings, use those, otherwise you can drizzle a balsamic vinaigrette over the skewers just before serving. Bread with Smoked Salmon & Herbed Crème… Read more >

Elise Lately [III]

I got a HUGE head of cauliflower at the farmer’s market.  I think it’s going to provide enough for multiple meals – I’m thinking this soup, these “steaks”, and/or some kind of recreation of this appetizer. I didn’t get any squash while there, but found these guys amusing. I made this loaf the same way I make every other loaf and it somehow ended up all squat?  It tasted the same, so I’m not sure what happened.  I used a different kind of yeast (organic Rapunzel was cheaper than Red Star when I went shopping… Read more >

Apple & Potato Hash with Blackened Tempeh

Let the apple recipes continue… I’m slowly working my way through my apple stash.  This recipe is clean and simple, so there’s a lot of room for tweaking it and/or adding in extra ingredients. Apple & Potato Hash with Blackened Tempeh [vegan, gluten free] Ingredients: For the hash: 2-3 potatoes (I used 1 russet and 2 red potaotes) 1 large apple (I used 1 pink lady) 1-2 tbsp coconut oil For the tempeh: 1/2 block (4 oz.) tempeh (I used TJ’s brand) 1 tsp cumin 1 tsp paprika 1/2 tsp onion powder 1/2 tsp garlic… Read more >
