Granola that’s chewy

This is like candy disguised as a breakfast cereal. I’m hesitant to call it my best ever granola, because my quinoa granola is kinda my signature recipe, but this one is really amazing. It only lasted a couple of days…probably because it’s been sitting on the counter so I just pick at it all day long.  CAN’T. STOP. Chewy Sweet Blueberry Granola [vegan, gluten free, FODMAPs friendly] Ingredients: 1/2 cup whole rolled oats 1/2 cup (gluten free) creamy buckwheat cereal (I used Bob’s Red Mill brand) 1/4 cup ground flax seeds (I used Linwoods nuts… Read more >

Sometimes it’s hard to snack well

Not a typical statement (or opinion).  For me at least. But I’m being honest here. Between the hours of noon and 5 pm, I graze.  Meals have no room here anymore.  And I’m not super proud of what has been going in my mouth this last week.  It’s not terrible stuff.  But it still leaves me feeling blah.  I can do better. I miss well balanced full meals.  They’re easier to build – with all the macronutrients represented.  And they leave me sated for hours (until my next full meal).  Grazing is confusing.  I’m not… Read more >

Snack snack snack

I feel like this is what every third trimester soon-to-be-mom says at some point, but to hell with the cliché.  I HAVE NO MORE ROOM.  Ugh. I’m so full and it’s depressing that it’s not from food.  Ok, that sounded bad.  I don’t mean I’m depressed that my son is a big healthy baby – that makes me very very happy.  What I’m bummed about is that I cannot honor my voracious hippie appetite in the way that I’m accustomed to doing.  I wanna freakin’ chow down and it’s just uncomfortable.  Lame.  So much for… Read more >

Quinoa & Seitan with Red Almond Sauce

I got pretty lucky with this recipe.  I made it with the scraps I had on hand, and it turned out so great I think it’s worthy of repeating. Quinoa & Seitan with Red Almond Sauce Ingredients: Salad 1/2 cup peas 3-4 large carrots, chopped 2 1/2 –3 cups cooked quinoa (or the yield from 1 – 1 1/4 cups dry quinoa) 1 1/2 cups seitan, cubed Sauce 1 cup almonds, soaked (2 hours to overnight) and drained 1/2 red bell pepper 2 tbsp soy sauce 1 tbsp sesame oil 1 tbsp brown rice… Read more >

Eating the garden

Recently I’ve been making the fruits of my labor into delicious meals. I don’t know where this love for pesto suddenly came from, but it’s really nice to be able to pick your own food and prepare it in the same day.  Thriving basil and parsley plants for the win! De Boles GF penne for me, 365 whole wheat spaghetti for him.    Nuts, hemp seeds, basil, parsley, olive oil, plain almond milk, pasta water.   Blended and blended until I got the texture (and flavor) I wanted.   I’m really trying to minimize wheat… Read more >
