I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. I ended up using 3 summer squash and 4 tomatoes, but you could really use whatever you have on hand…eggplant, zucchini, etc. The top is a corn meal crust, which I probably should have cooked a bit first because it ended up… Read more >

Saturday and Sunday were weekend warrior status for me (boo). I work every 3rd weekend at the hospital which is a nice change from my previous jobs that were every other. I guess that’s one of the big differences between full time and part time. But it was still a bummer since the rest of the world had long weekend. Anyway, my holiday pay started at midnight on Sunday (I think?) so even though I didn’t work on Monday I still got a little somethin somethin for ruining my 3 day off getaway potential. … Read more >

This week was fun. Busy and not busy in perfect amounts. One thing I’ve noticed about working part time is there’s a big (HUGE) difference between 2 shifts and 3 shifts. It may not sound like it, but I feel like the time off allows me to get so much more done. And rather than fill it with errands and chores, I can actually hang out and relax and enjoy myself. It’s lovely. Here are some of the things I ate this week. Breakfasts Baked oatmeal bars with blueberries [sorry about the crappy pic]… Read more >

Summer salads are best served chilled with a cold beer am I right? Or wine if you’re too fancy for B minus. Or champagne if you’re Heather Dubrow. <— yep, I’m getting my Real Housewives fix on bravotv.com For the record, I’m not hating on Mrs. Dubrow. I happen to love the bubbly myself. And even though she’s nicknamed “fancy pants”, I bet you she’d like this salad. But I digress. You’re here for food not my take on D-list celebs. I don’t know what the heck to call this dish since every… Read more >

Dramatic post title, huh. Even though I’ve already technically started work, it has all been fluff stuff, like HR paperwork, physical eval, etc. So this weekend was my last REAL weekend as a stay-at-home mom. It’s sad. I am trying not to think about what I’m missing while I’m away. But I do like that I can re-discover myself again outside of my mom role. I wouldn’t go back to nursing if I didn’t love it. Anyway, Friday was a pretty boring day. I dragged P to Sac with me because I had an appointment… Read more >
