It’s 9/29! You didn’t think I’d forget National Coffee Day did you!?!? Not a chance. I’m a tad behind in blogging because I’ve been playing catch-up around the casa. I’ve been productive, but I hardly deserve a pat on the back since it’s all stuff that I should have accomplished last weekend. For breakfast on Tuesday I had a bowl of One Lucky Duck grawnola, cheerios, and bananas on top of greek yogurt. Tuesday I got my running mojo back and after this bowl of deliciousness had digested I set off for a nice 30 minutes… Read more >

This was my first go at almond butter, and even though the result wasn’t what I expected, the nutty spread that resulted was still pretty tasty, and thus worth sharing. Because I soaked the nuts beforehand, the consistency of the nut butter turned out more like almond fluff. Here’s a photo essay of the process. 1/2 cup raw almonds [They have to be raw because the healthy enzymes are destroyed in pasteurized and/or roasted nuts] 1 cup room temp water (or enough to cover the nuts) And that’s all. I left them on the counter… Read more >

These past few days have been a bit busy for me…among other things, I’ve been prepping for my follow-up job interview (which is tomorrow – eek!). Coffee for four. All for me 🙂 I have been cooking, too, but as you can see, blogging has taken the back burner. Also, I’ve been having a string of bottomless pit days. I’m sure you’re familiar. You know the days when you’re stomach just won’t quit. Which is all well and good, except that it leaves me with 482 photos to post. Ugh. I may as well dive… Read more >

Such a productive day! First and foremost, I set up a job interview (hooray!), so…yeah. There’s that. But in addition to my latest career progress, I tackled more things on my to-do list and ate some amazing meals. The night before bed I threw together a tupperware full of overnight oats. I know I’ve mentioned it before, but I do like my oats raw. When I was young I ate Quaker’s packets with milk like cold cereal. I guess today’s overnight oats are just the more nutritious version… I wonder how long 2 1/2 pounds… Read more >

I went to bed sooo late last night because I was waiting for Kyle to finish his homework (yes, he has homework). Too bad for me that didn’t end up being until 1 am. I wasn’t too concerned because, hey, it’s not like I have a job or anything. But instead of sleeping in and regaining those lost hours, I was up and at ‘em at 7:30. 😡 6 hours of sleep? Meh. Not bad, but not a routine I want to roll with all the time. The early rise and shine did give me… Read more >
