I’m working though, which means I’m insanely jealous of anyone able to attend. My first attempt at oatcakes was a tasty one, but the texture didn’t work. The proof was in the pudding-like consistency. So I tried again. Much better. Now I feel confident sharing this success story with you all. Such a productive day! First and foremost, I set up a job interview (hooray!), so…yeah. There’s that. But in addition to my latest career progress, I tackled more things on my to-do list and ate some amazing meals. The night before bed I threw together a tupperware full of overnight oats. I know I’ve mentioned it before, but I do like my oats raw. When I was young I ate Quaker’s packets with milk like cold cereal. Thanks to my whole foods gift card, I was able to replenish my NuNaturals stevia… This frothy treat is coffee with coconut milk, cinnamon, and NuNaturals. Luff. Brunch was a bit unconventional…I felt like grilled cheese, so I got crafty and mashed together extra firm Nasoya tofu and nutritional yeast. It looks kinda bizarre, but tasted yum-may. Currently there is a pretty bomb deal going on at Whole Foods with Steaz (when you buy a 4-pack you get another for free), so obviously I went for it.
