After my parents left, Kyle and I spent the day catching up on errands around the apartment. It was raining so we kept busy indoors with football…and cooking.
I can’t believe this dish turned out to be such a hit. It was truly the most random thing ever, but it ended up really wowing my husband. It wasn’t vegan, but it could easily be made so. I guess that makes it blog-worthy…
Because I threw it together using what I had on hand, you probably already have the ingredients too. Tomatoes, onions, rice…they’re basics.
Comfort casserole
Ingredients:
- 1/2 onion
- 2 medium tomatoes
- 1 cup corn (or 1/2 can)
- 1/2 cup sour cream *
- 1 cup green enchilada sauce
- 1 1/2 cup cooked white rice
- 1/2 cup mozzarella cheese *
*To make vegan, replace sour cream with a mix of 1/4 cup non-dairy milk + 1/4 cup mozzarella Daiya “cheese” and replace the cheese topping with vegan cheese as well
In a 9×9 square casserole dish combine chopped onions, tomatoes, and corn. Then add in the sour cream and the green enchilada sauce.
Then add in the rice and stir it all up.
Once it’s adequately mixed, pack it down into the dish.

Then sprinkle the mozzarella on top.
Bake on 350 for 35 minutes. I cranked it up to broil for the last 2 muntes to brown the top of the cheese a little.
It smelled delish and Kyle could hardly wait to dig in…
I had my own vegan lasagna leftovers to dig into, so this baby was all his.
He had several servings…

Clearly he hated it. 😛
For dessert, I had the rest of my vegan peanut butter fudge from Whole Foods.
And Kyle said to hell with tradition and cut himself a big slice of wedding cake.
We both agreed that waiting until our first anniversary to enjoy the top tier of our wedding cake was ridiculous for several reasons: (a) it may be nasty by then, (b) we don’t have enough storage room in our freezer, and (c) it’s yummy. Why wait?!?
Also, he was only able to try one bite on our wedding day (we were so busy!). So I’m glad we ignored the anniversary rule. Something tells me waiting until next August would have led to a different reaction…

I’m with you… I’d be wanting cake a couple months in, and would NO WAY wait a year.
Go back to the bakery and have them make you a mini cake for your anniversary !! A FRESH one! 😀

Actually, one year old cake isn’t bad. We had a ton left from our wedding (not just the top) and all of it lasted and tasted great a year later. I think you just have to really wrap it up well when you store it. Ours was in saran wrap, foil, and a freezer bag. But, I also agree – get a new cake next year!
Yes, I want cake. Even if it’s a year old. We ate our year old cake on our anniversary – and Meeker was a little sketched out. He kept pointed pieces out and saying “Is that mold??” – I had no problem with it though. 🙂 Glad Kyle enjoyed his early – it’s really good whenever!

As much of a traditionalist as I am, I’d have trouble resisting wedding cake for a year as well 🙂
when i got married, it was the $199 wedding package in vegas. there was no cake, there was hardly even photos…24 exposure kodak disposable.
I would TOTALLY eat your cake before the year is over…why let good cake go terribly bad/dry/stale/rancid when you can eat it now. Seems like a no brainer to me 🙂
I would only eat my own year-old wedding cake if my loving wife took the first bite. I would then wait a couple of hours to ensure it is safe and proceed. Kidding… sort of. In reality though, i have eaten worse/older things that weren’t even frozen. My pops had yog in his fridge from 2001 (aka before my parents divorce, my mom had purchased it). Long story short: I went to his house in Summer 2002 and grabbed one, ate it, and was completely fine. Some things only get better with age, but i wouldn’t recommend ever trying to age yogurt. I easily could have died that day. 😉
My husband and I are not traditional people by any means, but saving the cake for a year was one thing we actually did by the book. We ate our wedding cake on our 1st AND 2nd anniversaries (we had a ton leftover) and it was amazing both times! I have no idea how that happened because I’m not an expert freezer or anything…it was just wrapped up in plastic and it kept somehow. If you have any left, you should try to freeze some and see how it is in a year, if for nothing else but just as an experiment! 🙂
We ordered a fresh cake from the same bakery for our first anniversary and totally marfed the original cake shortly after our wedding. TWO cakes is much better than one (just in my humble opinion) 🙂

I definitely broke the “1st anniversary rule” too, except I munched it over the course of our first year of marriage. Our cake was ridiculously delicious and my hubby isn’t a big cake person, so I basically just swiped bites (or slices, ha) throughout our first year of marriage and it was awesome. 🙂
We ate the top of our cake the minute we got home from our honeymoon…whoops! We were hungry and the kitchen was empty! I called the lady who baked our cake and had her make a replica cake for our first anniversary. It was fresh and delicious…just like the top tier we ate a year earlier!
bought the green enchilada sauce pre-made…it was in a tupperware because i had leftovers from my black bean vegan enchilada recipe. enjoy!
