I meant to share this recipe last week. Better late than never!
Butternut Squash Bowl
Ingredients:
- butternut squash (as many as you want to make bowls)
- quinoa
- carrots
- BBQ tofu (recipe here)
- avocado
Directions:
- Chop neck off squash so only the bowl portion remains. Remove seeds and bake.
- Make BBQ tofu.
- Make quinoa. [I used my rice cooker]
- Grate carrots.
- Scoop avocado into a bowl. Then add another for good measure.
- Combine quinoa, tofu, and carrots, with the avo and mash everything together. Then add to already baked squash.
Obviously the squash is more of a cutesy vessel for the dish than a practical way to eat butternut, but it’s still yummy when eaten all together. It just doesn’t look as good after you dive in…
If you do want to eat out of the squash – like chowder from a bread bowl – overcooking the squash helps. Otherwise you can simply enjoy how it looks, then chop it in half and go to town.

Gorgeous! And I love that you added the avocado! I seriously can’t get enough of those little green guys lately! I made some chocolate avocado pudding the other day (first time I’ve made it in over a year) and about fell over it was so good! How could I forget?
Why have I never thought to coat the tofu in flour before? Genius! Must try that!
i think its been even longer since ive made avo pudding. i love it, but i always want to use the avo in something that i can feature it more. hiding it in chocolate seems like a waste…but then it is soooo creamy smooth that way…..mmmm
