I am finding it much easier to keep up with posts when I quickly share a day of eats, rather than doing bigger posts with several days worth of meals (ie weekly dinner posts). Who knows what will stick. Everything is in flux since I am at the mercy of their distance learning school stuff. But now that we got our internet fixed, I am able to be on at the same time as them so I can actually do stuff for the blog while overseeing their calls/work/etc. It’s not always what I want to be doing per se, but I do desperately need the connection. So for now, you guys are the adults in my life. Feel free to say hi!

I wasn’t ready for how quickly that banana bread got consumed! Good thing I had this guy in the freezer!
Normally I’d stock up when we go to Boise to visit my in-laws, but obviously we haven’t seen them in almost a year now…and we have no plans to any time soon…so I guess I will be ordering from the Real Phat Foods website.
Grain bowl salad same same. Farro, kale, sheep cheese, dried cranz, slivered almonds, candied walnuts, lemon miso dressing.

Dinner was kale too. The kids actually requested it. Can’t say no to that!
I made quinoa in the rice cooker, massaged kale with a sesame oil/olive oil/tamari combo and then served that with chicken and toasted maple coconut chips.
The meal came to me in the store as soon as I saw the coconut flakes! They looked SO good! And I was in the mood for chicken, so when the kids asked for kale, I just made something up that used what I was already craving.

It’s super similar to this dish only instead of rice and tofu I used quinoa and chicken. I’ve made her original recipe previously, but it had been a while. Guess seeing the coconut flakes on the shelf in the bulk bins aisle sparked my taste buds’ memory!

Next up, dessert!

I don’t have a good photo of my full plate(s), but I’m still working through all my birthday chocolate š so I assure you I had plenty of yummy sweets.

Hi Elise, thank you for sharing and inspiring as always. I worked as a preschool teacher for a while and while it was so fulfilling I so understand that need for adult company and conversation! You’re doing amazing homeschooling two children and still finding time to update your blog…I have been a long time reader (10 yrs? my guess), so when i come over here I feel like I’m catching up with an old friend! Always enjoy your creativity with food.
