Breakfast lunch and dinner

I forgot about english muffins! Man, are they good!

I started the day with an ezekiel cinnamon raisin english muffin topped in miyoko’s vegan butter almost every day this week.

For lunch I had a Fall themed salad made up of leftovers, with spinach, kale, roasted sweet potatoes, roasted Brussels sprouts, dried cranberries, and rosemary flavored nuts.

These are so good! I had extras on the side of the salad.

They are seasonal so if you see them on the shelf at TJs grab them before they run out. That happened to me last year.

Dinner was an Asian chopped chicken salad. With pita on the side.

Semi random, but it used up things in the fridge that I needed to use up.

Kyle (and the kids) got me this seasonal selection of chocolates from TJs for my birthday. It’s something I would never get on my own because it is slightly random and yet, they totally blew my mind! If I make it back to TJs before they are gone (unlikely since I only go every 3 months, but whatever) I will definitely get them again. Each one is stuffed with a different kind of chocolate filling – some have little crispy bits in them, some are pumpkin-y, some are pure ganache. I haven’t tried one I haven’t liked yet!

And who doesn’t like eating a tiny acorn that’s actually chocolate?!
