More bread and butter. I guess all those acai bowls in Hawaii saturated my sweet tooth because lately all I am craving in the morning is salty butter.

And another farro and kale salad with all the usual suspects – feta, candied walnuts, dried cranberries, etc.
Plus lemon miso dressing.

And carrots on the side.
And a kombucha in the afternoon. Standard.
It seems like the only variable in my menu is dinner! What can I say? I’m a creature of habit. When I find things I like, I tend to get in ruts and crave them day in and day out.
Speaking of dinner…

I made chicken parm! Kinda.
More like chicken mozzarella, really, since there was no parmesan in the dish.

I split four HUGE boneless skinless breasts in halve (some into thirds) so they were evenly thin because I was too lazy to pound anything. I don’t even own a meat pounder and it seems like a messy affair all around.

After that I coated each piece in a combo of oat flour, quinoa flakes, and salt.
Then I baked them for 20 minutes at 400 degrees.

Next I removed them from the oven and added marinara and mozzarella.

I used the entire 8 ounces of cheese for the meal, which I also used as his dose. He has been eating so much dairy lately, I have lost track of how much he has eaten in a single serving because it is too obnoxious to track such a high amount. I’d guess 15-20 grams of protein? Maybe even more!?! I have no idea!! [As a reference his maintenance dose is 4 g]
Anyway, after I topped the pre-baked chicken in sauce and cheese, I baked it for another few minutes until the sauce was warm and the cheese was melting.

During which, I also sautéed some zucchini in a pan with olive oil.

And that was dinner. 🙂
It was surprisingly filling, and so the kids got a few leftover pieces in their lunches the next day.

And then on the late night (ahem, 8 pm) I had my chocolate fix.
