I started the day with nourish bread and miyoko’s butter.

For lunch I had the leftover Brussels salad from What’s Gabby Cooking.

I think the salad was even better the second time around! Probably because the Brussels were even more softened from an extra day of dressing breaking them down.

Anyway, I added the toppings – avo, candied nuts, and pecorino romano – and savored every single bite.

We ended the day with a simple salmon and broccoli bowl over wild rice.

I made the Vietnamese caramel sauce from my Dinner in an Instant cookbook, but made it in the oven (not the instant pot).
