Breakfast lunch and dinner

I don’t have much to say right now. Sometimes I get really inspired to write and ramble off effortlessly. That’s not now. I’m tired. Maybe that’s it. Kyle’s out of town. Point A and B are probably related to C.

In any event. Here’s the banana bread I made, which lasted a few days.

I tried to let the kids sleep in and set my alarm to work out before they were up. It has worked decently well actually, and we haven’t had to rush to get to school on time at all at all this week (“school” meaning the extra room upstairs that used to be the guest room/toy room but is now where they have desks set up side by side to do their daily distance learning zoom extravaganza). Usually Kyle and I alternate managing them while the other person works out, but with him gone, I am relying on them to get themselves dressed, hair and teeth brushed, beds made, yadda yadda on their own – more or less. We pick out outfits the day before so there are as few hurdles as possible and with the banana bread all ready to go, it hasn’t been the scramble I thought it would be.

The only downside is I am setting my alarm and working out earlier than my body wants. But I’m always happy in the end.

A good lunch can really make the day great, you know?

This was a good one.

I made pasta in the instant pot and it was a success. Similar to the one pot pasta method, I used marinara in place of some of the water so the noodles just cooked with the sauce – which I think makes them absorb more flavor!

I added a splash of cream at the end because we had it (and folded in the peas to cool it down so we could eat it). The active release of the IP took FOREVER! I usually let the pressure release naturally because I use the instant pot as a hands-off cooking appliance, but I didn’t want mushy noodles, so I released pressure right away once it was done cooking.

Once the kids were in bed I snuggled up with chocolate on the couch.

I guess I did have a few things to say after all…

    Your pasta dish looks delicious! I do think I’d probably add a side of chicken or something to pump up the protein!
    I am currently baking 4 loaves of banana bread as we speak at 6:40pm I think I know what will be breakfast tomorrow! I may have added chocolate chips and nuts to mine. YUM!

    Oh, workouts. How I miss those! I have an almost 17-month-old and it’s all hands on deck at all times. I’m also trying to get pregnant again, and for me that means I have to cut out exercise. I know I will get back to it again sooner rather than later, but man I miss those endorphins. Especially in these times! And I’m just impressed you’re still cooking. Even though I would pretty much be doing the same thing if there was no pandemic, and would have to have dinner on the table every night, my dinner inspiration is non-existent. We are down to the basics over here. Granted, if I didn’t have a child that insisted on being held from 3:00 on, that might make a difference πŸ˜‰
